Comments from the roaster: This coffee is not quite there yet in terms of sweetness and berry notes. They are there, but we want more of them!
Coffee in Progress:
Coffee in Progress is about sustainability and quality. When we get new green beans delivered to our roastery, we do our very best to set a roast profile that will bring out all the great flavors and aromas of that specific coffee. Sometimes, that takes a few roasts. So what do we do with these 12 or possibly 24 kilos of roasted coffee, that is good but not yet great? Well, we don´t ant to sell it for its normal price, since we don´t think the flavors are quite there yet. And we definitely don´t want to waste it, since that would be a lot of hard work by the producer going down the drain - and sustainably that would be a bad decision. So we decided we´ll sell it for a reduced price - so that you can follow the roast improvements (and also get a good coffee for a great price!)
About the coffee:
Coffee from the Biloya washing station is very dear to us. We bought coffee from here in 2010 and fell in love with it for its fantastic sweetness and berry notes. This is a natural processed coffee, which means the coffee cherry is dried with the pulp, before the pulp is removed and the coffee beans are washed.
