Named after Ethiopias national tree, the Acacia Core Coffee comes from smallholder farmers in the Yirgacheffe and Guji regions. The coffee reflect the work of whole communities, and is selected to represent the classic flavors of some of Ethiopias best recognized coffee producing regions. This coffee is graded 2 in a scale of 1-9. Still classyfied as speciality coffee, Ethiopia grades coffee a bit different compared to other origins. Instead of grading the screen sizes, Ethiopian coffees are graded based on defects and cup quality. In a grade 2, the coffee must have a max of 8 full defects in 300 grams. Just like grade 1 the roasted coffee should have at least one distinctive attribute for aroma, acidity or mouthfeel.
