Just arrived in the roastery! This clean washed lot produced by Leodan Human Villegas on his family’s farm, La Palma in the region Cajamarca in Peru. His family has been producing coffee for more than 60 years. In 2015 Leodan and his brother Eber took over the production from their mother.
After harvesting, the ripe coffee cherries undergo a flotation process to remove debris and separate lower-density beans, followed by 12 hours of fermentation in tanks. The cherries are then mechanically depulped without water using an automated processing module. After depulping, the seeds are washed with clean water and dried on raised beds for 12 days
