Taste profile: Sweet with notes of green pear, apples and butterscotch

Luis Anastasio Castro, better known as Tacho, was an early adapter to the micromill model. At this micromill, the Juanachute, the entire process is controlled. From planting the coffee trees to sealing the jute bags of greenbeans,allunderthesupervisionof DonTacho. This lot is Red Honey processed, which means that the beans are first washed, then dried on sunbeds in full sun for 14-21 days. The Castro family is involved in the coffee market in many different ways. One of Tacho’s sons is reponsible for the barista education program in the local high school, and competes in Barista Championships. Tacho’s other son works at a coffee exporting company and make relationships in markets.

The Aquiares farm produces a lot of different coffee varieties and we have worked with several of them for many years now. In February 2023 we visited the farm in Costa Rica and got to see the different varieties and ways they process the coffee. This nano lot is a natural processed Espreranza F1 Hybrid, which is a crossing made with Sarchimor T-5296 and a wild Ethiopia ET25 variety. It is reproduced through a tissue culture cloning process called somatic embryogenesis. Thiscultivar is very rare and Aquiares is one of the few farms to produce it on a commercial scale globally. The hybrid represents the best of the farm and cupping worlds, because it is high-yielding and rust-resistant and also has a complex profile.

The Aquiares farm is located on the enchanting slopes of the Turrialba Volcano, with lush forests, rivers, fauna and bright flora. The farm focuses on carbon neutrality, and mesures it’s greenhouse gas emissions to calculate its carbon emissions against offsets. In addition to capturing carbon, the farm’s protected biological corridors have long ensured the wellbeing of local animals and plants. Aquiares also welcomes reseachers from around the world to conduct agricultural and environmental studies on their land. The farm is a great exampel of innovation and perseverance whose benefits extend beyond the farm and workers andserve as a model for sustainable, equitable production for the broader coffee community.
